Blueberry Orange Mini Cakes

 

Ingredients:

  • 2 cups sugar
  • 1/2 cup butter, softened
  • 1 (3 oz) pkg. cream cheese, softened
  • 4 eggs
  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 (8 oz) carton orange yogurt
  • 1/4 cups orange juice
  • 2 tsp vanilla
  • 1 1/2 cups fresh or frozen blueberries

Preparation:

  1. Preheat oven to 325°F. Grease and flour Nordic Ware Bundt Muffin Mini Cake Pan.
  2. In large bowl, combine sugar, butter and cream cheese; beat 3 minutes, until well blended. Add eggs, one at a time, beating well after each addition.
  3. In medium bowl, combine flour, baking powder, baking soda and salt. Add flour mixture to butter mixture, alternately with yogurt, beginning and ending with flour. Stir in orange juice and vanilla. Fold in blueberries. Pour batter into prepared pan. Bake at 325°F for 25 to 30 minutes, until a toothpick inserted comes out clean. Cool 10 minutes in pan. Remove from pan. Cool and garnish with fresh fruit.
