Bread Salad Tuscan Style |

Ingredients: |
- 6 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- Salt and freshly ground pepper to taste
- 1/2 pound day-old crusty Italian bread, cut into 1/2 inch pieces (about 4 cups)
- 5 plum tomatoes, seeded & cut into 1/2 inch pieces
- 2 seedless cucumbers, peeled & cut into 1/2 inch pieces
- 2 red onions, thinly sliced
- 1 bunch basil leaves, cut into shreds
- Shaved Parmesan for garnish
- Extra-virgin olive oil, for drizzling (optional)

Preparation: |
- In a Cuisinart Food Processor fitted with the metal chopping blade, combine together the olive oil, vinegar, garlic and salt and pepper for
5 to 10 seconds. Set aside.
- In a large bowl mix together the bread, tomatoes, cucumbers, onions and basil. Add the dressing and toss to coat all the ingredients evenly. Serve on a chilled platter or individual plates. Garnish with shaved Parmesan cheese. Drizzle with extra-virgin olive oil, if desired.
- HINT: Use a vegetable peeler to shave thin pieces from a block of Parmesan. Shave the “curls” only in one direction for best results. Grated Parmesan is a good alternative. The flavour will be the same, although the appearance and texture will be different.
