Preparation:

1. Clean the lettuce and tear it into 1-inch-pieces. Dry the lettuce well and reserve in a large bowl.
2. Insert the metal blade in the Cuisinart Food Processor work bowl.
3. With the machine running, drop the cheese through the feed tube and process 30 seconds until finely chopped. Sprinkle the cheese over the lettuce.
4. In the food processor work bowl, mix the garlic, anchovy fillets, egg substitute, lemon juice, mustard, vinegar, Worcestershire sauce and pepper.
5. Process about 10 seconds until well blended. With the machine running, drizzle the oil through the small feed tube in a steady stream. The dressing will emulsify.
6. Sprinkle the croutons over the lettuce and add the dressing. Toss the coat and serve immediately.
