Gourmet du Village Clam Chowder for 2

 

Ingredients:

  • 5 ml (1 tsp) butter
  • 1 strip of bacon, cooked and diced
  • 2 Yukon Gold potatoes, peeled and diced 2.5 cm (1 in)
  • 1/2 Spanish onion, finely chopped
  • 1 stalk celery, finely chopped
  • 22 ml (1 1/2 tbsp) Clam Chowder Seasoning
  • 5 ml (1 tsp) cornstarch
  • 125 ml (1/2 cup) white wine
  • 125 ml (1/2 cup) bottled clam juice
  • 1 X 180 ml (6 1/2 oz) can clams
  • 375 ml (1 1/2 cups) 35% whipping cream
  • Small can of drained corn kernels

Preparation:

  1. In a large sauce pan melt butter. Add bacon, potatoes, Spanish onion, celery, Clam Chowder Seasoning and corn starch. Stir well.
  2. Add white wine and clam juice. Cover pot and cook for 5 - 10 minutes, or until potatoes are softened..
  3. Add clams and whipping cream. Heat until very hot but do not boil.
  4. Add a small can of corn. Salt and pepper to taste.
  5. Serve in Gourmet du Village Chowder Bowls
