Fish & Chips

Ingredients:

Beer Battered Fish

  • 4 X 8 oz (225 g) halibut fish (or any firm, white fish)
  • 1 bottle 12 oz (330 ml) beer
  • 1 1/2 cups (200 g) Gourmet du Village Beer Batter Seasoning Mix

Home Made French Fried Wedges

  • 3 medium sized potatoes
  • 2 - 3 tbsp ( 30 - 45 ml) olive oil
  • pinch of Gourmet du Village Seasoned Salt Blend

Preparation:

Beer Battered Fish

  1. Heat deep fryer with vegetable oil to 375˚F (190˚C), or use a skillet deep enough to cover fish completely in hot oil.
  2. Combine beer with batter mix until just blended (over mixing will make the batter tough).
  3. Dip fish in batter, letting excess batter run off. Carefully put fish in hot oil.
  4. Fry until golden and crispy and the fish is cooked all the way through (about 10 minutes).
  5. Serve with lemon wedges and French fries or baked wedges of potatoes.

Home Made French Fried Wedges

  1. Pre-heat oven to to 400˚F (200˚C).
  2. Wash and cut potatoes in half lengthwise, and then cut each half into four or more wedges.
  3. Place wedges in a large bowl and toss with olive oil.
  4. Place potatoes on a baking pan and roast in pre-heated oven for 30 - 40 minutes, or until crisp and golden in colour, turning them once after 15 minutes.
  5. Sprinkle with seasoned salt blend and serve with beer battered fish.
