Beer Battered Fish
- Heat deep fryer with vegetable oil to 375˚F (190˚C), or use a skillet deep enough to cover fish completely in hot oil.
- Combine beer with batter mix until just blended (over mixing will make the batter tough).
- Dip fish in batter, letting excess batter run off. Carefully put fish in hot oil.
- Fry until golden and crispy and the fish is cooked all the way through (about 10 minutes).
- Serve with lemon wedges and French fries or baked wedges of potatoes.

- Wash and cut potatoes in half lengthwise, and then cut each half into four or more wedges.
- Place wedges in a large bowl and toss with olive oil.
- Place potatoes on a baking pan and roast in pre-heated oven for 30 - 40 minutes, or until crisp and golden in colour, turning them once after 15 minutes.
- Sprinkle with seasoned salt blend and serve with beer battered fish.
