Gourmet du Village Roasted Red Pepper Baked Goat Cheese

 

Ingredients:

  • 1 X 150 g. (5 oz. ) soft unripened goat's milk cheese
  • 1/2 contents of the pouch of GOURMET DU VILLAGE ROASTED RED PEPPER SEASONING
  • 15 ml (1 Tbsp) pine nuts
  • 1/2 contents of the pouch of GOURMET DU VILLAGE RED PEPPER FLAKE TOPPING
  • OPTIONAL
  • 50 ml (1/4 cup) coarsely chopped grape-tomatoes
  • 6 pitted Kalamata olives, chopped
  • 15 ml (1 Tbsp) chopped French shallot
  • 2.5 ml (1/2 tsp) olive oil

Preparation:

  1. Preheat oven to 180˚C (350˚F)
  2. Blend the cheese and seasoning. Add the nuts. Gather the mixture into a ball, using a piece of plastic wrap, shape the mixture into a log of about 10 cm (4") long.
  3. Pour the red pepper flakes onto a plate. Roll the cheese log into the red pepper flakes. Coat well.
  4. OPTIONAL: In a small bowl mix the tomatoes, olives, shallots and olive oil, then spread in the bottom of a Gourmet du Village Goat Cheese Baker.
  5. Place the cheese log on top, cover and bake in a pre-heated oven for 10-15 minutes.
  6. Serve with slices of French baguette bread, mini pita breads or crackers and raw veggies.
