Sun Dried Tomato Creamy Pasta Sauce with Shrimp & Spinach

 

Ingredients:

  • Contents of 1 packet Sun Dried Tomato Dip Mix
  • 30 ml (2 tbsp) extra virgin olive oil
  • 1 clove garlic, minced
  • 15 ml (1 tbsp) olive oil
  • 750 ml (3 cups) uncooked bow tie pasta (farfalle)
  • 300 g (10 oz) frozen spinach nuggets ((30 g/1 oz) pieces)) – about 10 pieces, thawed
  • 454 g (1 lb) large shrimp, peeled & deveined
  • 125 ml (1/2 cup) chicken broth
  • 125 g (1/2 cup/4 oz) fat reduced cream cheese
  • 60 ml (1/4 cup/4 oz) freshly grated Parmesan cheese

Preparation:

  1. Empty contents of Dip Mix into a small bowl & add extra virgin olive oil. Stir until well combined.
  2. While Dip Mix & oil marinate, cook pasta according to package directions.
  3. Heat a large non-stick frying pan over medium high heat. Coat pan with 15 ml (1 tbsp) olive oil & sauté garlic for 30 seconds.
  4. Add shrimp; cook 4 – 6 minutes. Add chicken broth & cream cheese. Stir constantly to combine. Reduce heat and simmer for a few minutes (sauce may seem watery, but will reduce to a thicker consistency as it simmers).
  5. Add Dip Mix & olive oil mixture; stirring until well combined. Add spinach; stir again until everything is well combined. Continue to cook for about 2 minutes.
  6. Remove from heat and stir in drained pasta & Parmesan cheese.
  7. Serve immediately on a Gourmet du Village rectangular platter. Garnish plate with lemon wedges & a scattering of fresh basil leaves.
  8. Serves 4
