Seafood Crostini

 

Ingredients:

  • 2 sole filets
  • 2 slices salmon filet (1 1/2 oz / 43 g each)
  • 1 1/2 oz / 43 g small raw shrimp peeled and deveined
  • 4 tbsp / 57 ml lemon juice
  • 1/2 baguette
  • 3 tbsp / 43 ml herb butter
  • 4 plum tomatoes
  • 3 tbsp / 43 ml oil
  • Salt and pepper
  • 1/2 cup / 114 ml créme fraîche

Preparation:

  1. Cut fish filets in half and sprinkle with lemon juice.
  2. Slice bread and spread with herb butter.
  3. Slice tomatoes, remove seeds, and brush with oil.
  4. Pat fish dry and brush with oil. Sprinkle preheated grill with salt on medium heat.
  5. Grill tomatoes, fish and bread, then season with pepper.
  6. Top bread with other ingredients and serve with créme fraîche. Serves 4.
